I can't believe it has been a month since my last post. Where has the time gone? Life and my business have gotten very busy, which is wonderful, but means fun tasks like my blog fall to the wayside. This is a cobbler that I made for a dinner party a couple of weeks ago. It is a combination of a bunch of recipes into something that I liked best. You can use any fruit you like with this recipe (within reason) so if you don't like blueberries try something else. Feel free to also use fresh or frozen, but fresh is preferred.

Filling Ingredients 2 1/2 cups Blueberries 1 tsp Vanilla extract 1/2 lemon, juiced 3/4 cup white sugar 1 Tbsp Melted Butter 1/2 tsp flour Topping Ingredients 1 1/2 cups Flour 1 tsp baking powder Pinch of salt 1 Egg 1/2 cup white Sugar 8 Tbsp cold Butter, cut into bits 1/2 tsp Vanilla Instructions Preheat your oven to 375 degrees. Lightly grease a 8 inch square or 9 inch round baking dish. Place the blueberries in the dish and mix with vanilla and lemon juice. This will help to build some volume into the flavor. Next add the sugar, flour and melted butter. Mix together and set aside. In a food processor combine the flour, baking powder, salt and sugar for the topping. Once combined add in the butter and process for 10-30 seconds or until everything is combined. Now by hand mix in the egg and vanilla. Drop spoonfuls of the topping on top of the blueberries until the topping is well dispersed. Don't try to spread it out. Bake for about 30-35 minutes or until the top is just turning brown. If you want to can add a mixture of cinnamon and sugar to the top for the last 10 minutes of baking. Serve right away. A wonderful topping is some fresh whipped cream with a little vanilla in it.
